Kitchen Duties
Weekly Kitchen Duties:
· Purchase sufficient food to feed the number of players each week, based on 20 per team on average - one home game means 40 match teas, 2 means 80 etc. & don't forget to buy plenty of bacon & at least 4 pints of milk, money can be reimbursed from cash box on the day.
· Bring a couple of clean T-towels, just in case none available in kitchen.
· Arrive at 9:45 (Club opened at approx 9:30) - please contact Toby (see below) to get both the petty cash box & the keys well in advance.
· Price List in kitchen.
· After matches food is provided for the both home & away teams free of charge (burger or sausage & jacket potato or chips).
· Minis non-perishable food items in left hand side of large cupboard in kitchen (will be unlocked), right hand side, senior club items, if anything needs to be borrowed please let Toby Eves or the next Team Manager know.
· Frozen/fresh food in fridge/freezers in referees room (inside the ladies toilet door & then first door on right). Usually fresh bacon in fridge, otherwise in freezer, rolls in freezer, together with sausages & burgers. Sausages & burgers cooked from frozen on the hot plate. Chest freezer in kitchen for senior club food only.
· Turn on:
· Microwave.
· Oven to left of fryers big red switch on wall.
· Two deep fat fryers: make sure the thermostat button is turned up until the orange light comes on (if needed).
· Hot plate to right of fryers, switch on wall, also make sure thermostat button for hot plate turned up until orange light comes on, situated underneath hot plate.
· Coffee machine to the left of kitchen door, as you come in.
o Filters available in cupboard and filter coffee, about 6 dessert spoons for each jug - water poured in top of machine, through plastic mesh.
· Kettle for tea, bags in left side of large cupboard, usually in a Tupperware box.
· Drawers under counter contain cutlery (teaspoons near small fridge to the left of the counter) & cooking utensils (spatulas near coffee machine).
· Cooking instructions:
· Usually bacon rolls first to be cooked, bacon on hot plate. Bacon can be kept warm in oven under hot plate. Jacket potatoes can be put straaight in the oven ASAP. For larger ones it may be best to either part pre-cook these in the microwave or at home, or as a last resort cut in half! It is also advisable to move the trays around in the oven after an hour to even out the cooking process, avoiding the ones at the top being singed & the ones at the bottom being hard in the middle.
· Sausages then need to be cooked, from about 11:00 (this will depend on the number of players at home), these can be kept warm in the oven to the left of the fryers, make sure not up too high, otherwise tend to be cremated. Be careful to check that the fat overflow drawer under the hot plate to the left is not too full as this can overflow and make the floor extremely hazardous and difficult to clean later!! Be careful when emptying, fat can be very hot & the drawer is quite long, pour contents into a metal container & then leave to cool.
· From about 11:30 (if there are several teams at home) you can start cooking the chips - if you are not providing JACKET POTATOES which are now the prefer & recommended healthy alternative - these can also be kept warm in the oven to the left of the fryers in one of the large metal oven trays, it is best not to cook too many chips at one time as they take ages, fill the basket about half way, making sure that the oil covers the chips when lowered.
· Burgers & other food are also available at the Team Manager's discretion, but these are NOT provided free of charge to players who have not played a match but merely trained that morning. This & the bacon rolls/coffee allow us to offset the cost of the free match teas provided to our own & visiting players.
· Please ensure that the kitchen is left in a clean & tidy state and that the floor is washed.
